Ingredients

2 Cups Short Grain or Long Grain Rice even you can use Basmati instead of grain 
4 Cups of water
1-2 Cup thick Coconut milk
1 tsp Salt (To taste)

Step 1

Wash the rice well.

Step 2

Place the rice in a rice cooker pot or in a medium size pot.

Step 3

Add water & 1/2 tsp salt to the pot and cook it till the water absorbed to the rice & make sure it’s boiled. At the same time don’t make it too boiled either.

Step 4

Add the rest 1/2 tsp salt to the coconut milk and stir until it’s completely dissolved.

Step 5

Now pour the coconut milk in to the rice pot and stir well. if you use gas stove or electric stove reduce the heat to medium low to keep the pot simmering. Stir for few minutes, until it gets creamy consistency.

Step 6

Turn the heat off & let it cool for few more minutes.

Step 7

Transfer the rice to a flat surface or a plate.

Step 8

Wash your hands & apply some vegetable oil to your hands. flatten the rice using your hand. Try to flat as much as you can. That way you could cut it smoothly.

Step 9

Cut it into desired size and shape. Traditionally milk rice cut into diamond shape pieces. Apply some oil to the knife before cutting the rice. It’ll help you to avoid the stickiness of rice.

Serve Milk Rice with Lunu Miris (Sri lankan Salsa) or Halmasso (Sprat) badum.
