Sri Lankan Chop Suey and Chop Suey Rice

Ingredients

1 Cup Carrots Sliced

6-7 Cabbage leaves cut in half

1 Cup cauliflower break in to pieces

1 Cup baby corn

10-15 beans

1 Cup Broccoli  break in to pieces

1 medium size onion sliced

4-5 Garlic cloves cut in to small pieces

2 vegetable/Chicken Soup cubes or vegetable/Chicken stock

2 Tbs Butter

1 Tsp Oyster sauce

1 Tsp Sugar

1Tbs Soya Sauce

1/2 Tsp pepper

Salt to taste

3 Tbs of corn flour or 1 1/2 Tbs of corn starch dissolved in  1-2 cups water

For chicken or prawn chop suey

100g of chicken cleaned, washed and cut in to small bite size pieces and boiled

100g or 8-10 prawns cleaned washed and boiled

For chop suey rice

2 Cups of cooked basmati rice

 

Step 1

In a wok or large deep frying pan, heat 2 Tbs butter.

Step 2

Let it melt. Then add garlic and stir fry 30 seconds.

Step 3

Then add sliced onion in to the pan and stir it for another 30 seconds.

Step 4

Add carrots, cauliflower, baby corn or any other vegetables (which take long time to cook-add them first) and saute them all together with pepper.

(if you make chicken or prawn chop suey, at this stage, add boiled meat in to the pan and stir.)

(you can use any kind of vegetables to make cop suey like mushrooms, peppers, beans sprouts, asparagus, Zucchini etc. Specially the vegetables do not produce more and more water or change color)

Step 5

Add water to cover the vegetable.

(You can use vegetable/chicken stock/broth instead of water or both as you prefer. If you are not adding stock/broth, add 2 soup cubes (bouillon) along with 1/2 tsp salt. Don’t put too much salt at first, because store bought stock/broth/soup cubes can be very salty. Always add salt gradually when you prepare food.)

Step 6

When it’s started to boil, add sugar, oyster sauce and soya sauce in to the pan. Stir well. Let it cook for another few minutes.

(Do not overcook the vegetables. it makes decrease the vegetables flavor, color, nutritional value and as well as it lets vegetable to break & dissolve.  So always consider about that.)

Step 7

When it’s done halfway, add broccoli, beans and let it cook for another few minutes.

Step 8

Add cabbage and stir well. Then add corn flour/starch mixture in to the pan. stir well and let it cook for few minutes.

Step 9

Finally add salt to taste.

(you can balance the thickness of the chop suey from corn flour/starch and water.)

(Again do not overcook the vegetables. Keep it in your mind from the start to the end. Also you can control the spiciness as you prefer.)

Step 10

To make chop suey rice,

in a large bowl, combine the cooked rice and 1cup of chop suey together.

 

Serve this delicious chop suey with Fried rice or Fried noodles

Serve chop suey rice with a fried Egg, a fried sausage and chili paste. Heavenly!!
