Ingredients

1 Can condensed milk (395g)

235g Finely ground sugar

10 Cardamom powdered (Seeds only)

1/4 Cup chopped cashew

1/4 Cup chopped raisins

1/2 Cup water

1 Tbs of butter

Step 1

Grind the sugar. (It makes easier to dissolve sugar in the milk and also it’ll prevent scratching your non stick pan from sugar.)

Take one large deep non stick pan. (I prefer a non stick pan.) Then add milk,sugar and water. Combine all together till sugar dissolves slightly.

Then put the pan on medium high heat and let it cook for few seconds while string. And stir it continuously.

Then add butter in to the pan and stir well. Keep stiring till it becomes a thick sauce.

Add powdered cardamom to the mixture and stir well.

Then add chopped raisins and cashews into the pan and mix all together.

At the end, if you highly consider a smooth flat surface – You have to reduce amount of dry fruits or you have to powdered them slightly.

Also you can add almonds, peanuts, pistachios etc..(if you have them at home.) Don’t add everything. Just pick two or three of them and add. Otherwise it’ll make your toffee taste different. Also it could be affect to the consistency of the toffee mixture.

Once it started to leave the pan, transfer the mixture to a flat tray coated with butter and dusted flour.

Spread it on the tray and press down and flatten it well. Sprinkle some flour when you flatten it. it’ll help to avoid the stickiness. Or Use aluminum foil slightly coated with butter. cover the flatten mixture with the foil. again flatten it using a rolling pin or a round glass bottle.

With a flour-coated knife carefully cut it in to square shaped pieces, before it get set.

And let it cool for 30 -40 minutes. Break it along cutting lines and arrange the pieces in a plate.

You can serve this with hot plain or ginger tea. This is a delicious and very famous tea time snack in Sri Lanka.
