Tempered Dal Curry (Parippu Themparadu)

Ingredients

2 Cups Masoor dal
4 Cups water
10-15 Curry leaves
1 Pandan leave Sliced in to large pieces
2 Inch Cinnamon stick
1 Medium Red onion OR 10 Shallots
1/2 tsp Turmeric
1/4 tsp Sri Lanka Raw Curry powder (Optional)
1 tsp Red Chili powder
1 tsp Salt (To taste)
1 Cup of Coconut milk
1 tbs Mustard  seed
3 Cloves of Garlic chopped
1 tbs Chili flakes
4 Green Chillies sliced
2 Dry Chillies sliced in to large pieces
2-3 tbs Coconut oil or Vegetable oil

Pinch of Sri Lankan Roasted Curry powder (Optional)

Step 1

Take the masoor dal & wash it well with water. Place the dhal in a medium size wide mouth cooking pan.

Step 2

Add 1/2 of the chopped onion, slicesd pandan leave, 1/2 of the curry leaves, cinnamon stick, turmeric, curry powder, chilli powder, salt & water in to the pan. Mix the ingredients using your hand or a spoon.

Step 3

Keep the pan on medium high heat to boil the dal for 10-15 minutes until it brings to boil. If it’s need more water to get the right consistency, add more water as it requaired.

Step 4

Meanwhile, take another pan and add the coconut oil or vege oil in to the pan. Heat the oil. Step by step add these rest of ingredients. Garlic- fry until it gets light brown color. Do not burn the garlic. Then add onion, mustard  seeds, sliced dry chillies, curry leaves until nice and golden. Finally add the chili flakes in to the tempered mixture and immidietly take the pan out from the heat. Do not let burn the chili flakes.

Step 5

Once you cooked the dal add the tempered mixture in to the pan and mix together. Then add coconut milk to the pan and mix it again. At this point, taste saltiness and add salt to taste. Keep the pan 3-5 minutes on the low heat till it comes to boil. When you see the bubbles on top of the curry take the pan out from the heat. Sprinkle pinch of roasted curry powder all over the curry. It gives nice spicy smell to the Dal curry. This is optional

You can serve this spicy Dal curry with Bread, Rice & Roties!
