Fried Dry-fish & Dry-chili Mixture
|Ingredients
500 g Thalapath dried fish (Sailfish) washed & cut into an inch size cubes
2-3 tbs chili flakes
10-15 curry leaves
Salt (to soak)
15 dry red chilies slightly cracked
Oil to fry
Step 1
Take a small cup with full of water and put 2-3 tbs of salt into the cup and stir till it gets dissolve. Then taste it & see. Amount of salt depends on how saltiness you’d prefer.
Step 2
Dip the chilies in the salt water & cover it tight. Soak the red dried chilies in that salt water for about 3-4 hours. The cracks will help to absorb the salty water into the chilies.
Step 3
Heat a small deep pan with about one cup of oil
Step 4
Deep-fry the dried fish stirring constantly till it gets firm & dark golden color. Try not to burn it.
Step 5
Keep them aside in a medium size bowl. Don’t use plastic bowls.
Step 6
Fry the soaked red chilies till it gets nice shiny bright red color. Chilies will not take long time to fry
Fry the curry leaves as well
Step 7
Put the fried chilies & fried curry leaves to the same bowl that has fried dry fish.
Step 8
remove rest of the oil from the pan, and leave 3-4 tbs oil in the pan.
Step 9
Heat the oil. Add chili flakes for quick fry. Take out the pan from the heat immediately. Don’t let the chili flakes burn. You can change the amount of chili flakes according to the spiciness you’d prefer.
Step 10
Pour the oil on to the fried chilies, fish & curry leaves. Mix all together well.
Fried cashews, fried onions can also added to this mixture if you have. It’ll make this dish tastier. However that’s optional.
