Roasted Cashew Chili Paste

Ingredients
250g Roasted cashews
5 Tbs chili flakes
10-15 Curry leaves
Salt to taste
1 Medium size onion chopped
1 Inch ginger piece chopped
4-5 Garlic cloves chopped
2-3 Tbs of Maldive fish
5-6 Tbs of lime juice
2 Tsp sugar
3-4 Tbs coconut Oil
Step 1
In a small cup, mix lime juice and sugar well together until the sugar is completely dissolved.
Step 2
Heat 3-4 tbs oil in pan over medium heat.
Step 3
Put ginger, garlic & curry leaves to the pan and fry until it gets light brown. Then add chopped onion and 1 tsp salt. Stir till it turns brown. Add Maldive fish, chili flakes & quick fry. Don’t let the chili flakes burn. And finally put the lime and sugar mixture in to the pan. Mix them all together.
Turn off the heat as soon as you add the lime mixuture in to the pan.
You can change the amount of chili flakes according to the spiciness you’d prefer.
Step 4
Put roasted cashews in to the pan and mix it well. At this point, taste saltiness and add salt to taste if necessary.
You can serve this with fried rice, Chop-sue rice, Nasi goreng, Hoppers etc.
