Ingredients

2 1/2  Cups Rice flour

1 1/2 Cups Sugar

1 1/2 Cups water

4-5 Cardamom, powdered

1/2 Inch piece of Cinnamon, powdered

1/4 tsp Black pepper powder

1/2 cup Cashews, powdered

Step 1

Take a large pan and put the rice flour in to the pan. Roast the rice flour under medium heat until it starts to change color slightly. About 10-15 minutes.

Step 2

Remove 1  cup of rice flour in to another bowl. This is for final dusting & coating.

Step 3

Add the cardamom, cinnamon, black pepper & cashews to the roasted rice flour & mix all together. Set it aside.

Step 4

Take a flat tray and dust some rice flour on to it. Or you can lined a wax paper to the tray top. Keep it aside. However you should have ready a floured flat surface to transfer the dough.

Step 5

Pour the water in to a deep pan and put it on medium high heat. Add the sugar in to the pan . Let it boil until form a thick line.

Step 6

Take out the pan from the heat. Let it cool for about 1-2 mintes. This will help you to have a good color. Then add the roasted rice mixture gradually in to the sugar syrup & mix it all. Make a soft dough. If it’s too watery, add more flour. If you think it’s too hard to spread add some sugar syrup or treacle.

You can by a bottle of sugar syrup from a local grocery store and keep a side to use it at this point. Or use treacle if you have it. Sugar syrup is good. Otherwise treacle could cause to a color change. In case, use this method.

Step 7

Take the tray which we kept aside or use the floured flat surface and put the dough on to it. Quickly spread and flatten it to 1 inch thickness.

Step 8

Dust some flour on the dough. Then cut the flatten dough in to desired shapes. Traditionally and mostly we cut it in to diamond shapes. size and shapes depend on your choice.

The knife should be floured before each cut. It’ll help you to avoid the stickiness. When you separate the dough shapes, remember to dust some flour  each time. it’ll help you to have a traditional, professional- looking  smooth finish.

Step 9

Take the remaining rice flour. Coat the Aluwa pieces with the flour well.

According to the given amounts of ingredients, you could make about 10-15 Aluwa pieces.
